Most of you know the story of this Pommard block by now so I won’t bore you with it again here. We have had our designated 12 rows of Pommard clone Pinot from block 19 on the Stanly Ranch since 2004. Every year we are out in the vineyards at various times during the growing season to ensure the fruit ripens to perfection That, of course, means working with Mother Nature and what she gives us and adding our two cents to the mix.
This year we harvested in the middle of the night on Sept 11 hand picking every last cluster with the crew. The Brix was 25.2 with nice acidity to balance. We de-stemmed and then dumped the must into a small open top tank. After a 6 day cold soak, the yeasts began chomping away at the sugars- beautiful wild fermentation once again! Manual punching down (or stomping) occurred for 2 weeks until the wine went dry. It was then barreled down into about 40% new French oak and laid to rest until bottling 11 months later.
